Cilantro Burgers with Sriracha Aioli + Parmesan Parsnip Fries


Ingredients:
1-pound ground beef
Fresh cilantro bunch, chopped
¼ teaspoon salt
¼ teaspoon pepper
2 cloves fresh garlic, chopped
4 hamburger buns
4 slices of cheddar cheese
3 tablespoons mayonnaise
1 tablespoon Sriracha
6 parsnips
1 red onion
½ cup Parmesan cheese
EVOO

Directions:
-Peel parsnips cut vertically and horizontally in half. Add to baking sheet and drizzle EVOO on top. Heat oven to 350 degrees F.
-Combine ground beef, salt, pepper, and garlic into a bowl. Mix and make into patties.
-Add patties to grill pan and parsnips to oven. Set oven timer for 10 minutes.
-Combine mayonnaise and Sriracha in small bowl.
-Add EVOO to buns and brown on top of griddle pan.
-Cook burger to liking, add cheese, and transfer burger to oven for an additional 5 minutes for cheese to melt.
-When timer goes off on parsnips add Parmesan cheese and bake for another 5-10 minutes or until golden brown.
-Chop red onion and cilantro.
-Assemble burgers – Bottom bun, Sriracha aioli, beef, red onion, cilantro, and top bun.
-Take parsnips out of oven and serve with burger.
-Crack open a Boulevard Tank 7 and dig in!
-Add cilantro to every future hamburger you ever cook ;)

Calling all Coffee and Cookie Dough Lovers!


If you are anything like me, when baking cookies you are lucky if you turn out with a few baked cookies in the end. I usually just end up with a stomachache after eating all the dough. Thanks to my mom, I have discovered the perfect cookie dough concoction that is egg free and has fairly low sugar content! Trust me, you will not want to put this cookie dough in the oven. Instead, just pour yourself a big glass of milk and turn on your favorite sad chick flick and grab a spoon. :)

Mix: 1 cup flour, 1 teaspoon finely ground coffee, 1/2 teaspoon cinnamon, 1/4 teaspoon sea salt, 1/4 teaspoon baking soda, 1/2 teaspoon baking powder. Melt: 3 tablespoons of coconut oil and add to 2/3 cups brown sugar, 2 tablespoons of milk, 2 teaspoons vanilla extract. Combine: wet and dry ingredients add ½ cup semi sweet chocolate chips.

Five Spice Beef and Bell Pepper Kebabs

I have finally found my go-to kebab recipe. Five spice is SO delicious with beef. Bring it on, grilling season!

Ingredients:
¼ cup soy sauce
2 tablespoons of orange juice
2 teaspoons honey
1 teaspoon minced garlic
1 teaspoon mined fresh ginger
¾ teaspoon five-spice powder
1/8 teaspoon red pepper flakes
2 (8 oz) sirloin steaks
2 red or yellow bell peppers
1 teaspoon sesame seeds

Directions:
Combine first 7 ingredients and stir with a whisk. Cut steak until ¼ inch thick strips and let stand in marinade for 15 minutes. Thread beef and peppers onto skewers and grill. Sprinkle with sesame seeds to serve.
